Our Indian black pepper develops a rare aromatic profile: a lively attack, a lemony echo, then a resinous touch reminiscent of wild cardamom. With each turn of the pepper mill , you diffuse a precise heat that awakens a lentil dhal, a mango salad or grilled fish, without masking the finesse of the ingredients.
After harvesting, the red berries are washed in spring water and then dried for three days in the sun, preserving piperine and essential oils. The result: a complete seasoning that reduces the addition of salt while amplifying the flavors. Its volatile compounds withstand long cooking in broth, but also offer an aromatic explosion when ground just before serving. How to use Indian Black Pepper
- Set the grind fine for sauces, coarser for marinades.
- Grind directly on the plate just before serving.
- Crush ½ tsp into a marinade and let it infuse for 30 min.
